Ingredients

  • 1 tablespoon of dried chamomile flowers
  • 1 teaspoon of dried lavender (optional)
  • 1 cup of filtered water
  • 1 teaspoon of raw honey (optional)

Preparation

  • Bring water to just below boiling (around 95°C / 200°F).
  • Add chamomile and lavender to a teapot or infuser.
  • Pour the water over the herbs and cover.
  • Steep for 5–7 minutes, strain, and sweeten if desired.

Ingredients

  • 1 inch of fresh ginger root, thinly sliced
  • Juice of half a lemon
  • 1 cinnamon stick
  • 1 ½ cups of filtered water
  • 1 teaspoon of raw honey (optional)

Preparation

  • Add ginger slices and cinnamon to the water.
  • Bring to a boil, then simmer gently for 8–10 minutes.
  • Remove from heat and stir in the lemon juice.
  • Strain into your cup and add honey if you like.

Ingredients

  • 10 fresh peppermint leaves (or 1 tablespoon dried)
  • 1 teaspoon of fennel seeds

Preparation

  • Lightly crush the mint leaves to release their oils.
  • Boil the water and pour it over the herbs.
  • Cover and let steep for 6–8 minutes.
  • Strain and sip slowly after meals.

Ingredients

  • 1 tablespoon of dried lemon balm leaves

Preparation

  • Heat water to about 90°C / 195°F.
  • Combine all herbs in a teapot or infuser.
  • Pour the water over and cover for 7–10 minutes.
